Grandma Singleton's Blueshire Cheese and Broccoli Soup

Serves 4 - 6



200g Grandma Singletons Blueshires Cheese
300g Broccoli, roughly chopped
200g Potato, rough 1cm dices
150g White onion, finely chopped
10ml Olive oil
1.5 litres Vegetable stock
Salt & Pepper



  1. Weigh all ingredients as listed above.
  2. In a large pan on medium heat, add the olive oil, sliced onions and cook without colour until soft.
  3. Place the broccoli and diced potato in the pan and cover with the boiling stock.
  4. Bring to the boil and leave to simmer for 20-30 minutes, until the broccoli and potato are cooked through. 
  5. Add the Grandma Singletons Bleshire cheese and leave for a few minutes to melt.
  6. Blitz the soup with a food stick blender until smooth.
  7. Season with salt and pepper.
  8. Serve with crusty bread - Grannies perfect dish for a cold winters day!
