Grandma Singleton's Cheshire Cheese & Tomato Pasta Salad

Serves 4 - 6




 120g Grandma Singleton's Cheshire Cheese
160g Pasta, any type
30g Fresh mint leaves
20g Fresh corriander
10ml Olive oil
6 Plum tomatoes

1 Red onion, small
Salt & pepper



  1. Weigh all ingredients as listed above.
  2. Bring 2 large pans of salted water upto the boil on a high heat.
  3. Carefully place your chosen pasta into the rapidly boiling water and cook for 9-12 minutes until cooked.
  4. Drain the pasta and toss in a little bit of olive oil, this will ensure the pasta does not stick together when it has cooled down (Tip; Do not place the pasta under running water to cool it down quicker, this will wash off the salt used to flavour the pasta in the cooking process.)
  5. In the second pan of boiling water, carefully place the tomatoes in to cook for 5 seconds.
  6. Remove the tomatoes with a slotted spoon & place in ice cold water.
  7. Using a small prep knife, cautiously peel the skin off the tomato and discard.
  8. When all the skin has been peeled off, pat the tomatoes with kitchen paper to remove any excess juice.
  9. Slice the tomatoes into 6-8 segments and remove the seeds, place in a large serving bowl.
  10. Peel and dice the red onion as finely as possible and add this to the bowl.
  11. Add the pasta to the bowl and carefully mix all the ingredients together.
  12. Roughly chop both herbs, crumble the Grandma Singleton's Cheshire cheese into the serving bowl, season to taste with salt and pepper.
  13. Lightly toss the ingredients together.
  14. Serve as a tasty lunch time meal or as a delicious side dish at a BBQ!
