Grandma Singleton's Cheshire Cheese with Fruit Cake

Serves 10 - 12




400g Grandma Singleton's Cheshire Cheese
225g Self-raising flour
175g Butter, unsalted softened                        
175g Soft brown sugar                                                      
100g Glace cherries
100g Sultanas
100g Raisins
15g Golden syrup                                                        
10g Ground mixed spice
3 Eggs



  1. Weigh all ingredients as listed above.
  2. Preheat the oven to 160 degrees C.
  3. Place all the ingredients, apart from the cheese, in a bowl and beat together until well blended, or if possible use a food processor.
  4. Spoon into a greased and lined 20 cm/8 in cake tin.
  5. Bake in an oven for approximately 1 1/2 hours until a skewer inserted in the centre comes out clean.
  6. Leave in the tin for 5 minutes, then turn out on to a wire rack to finish cooling.
  7. Serve like Grandma would with a thick slice of Grandma Singleton’s Cheshire cheese!
