Grandma Singleton's Double Gloucester Quiche Lorraine

Serves 6 - 8




300g Grandma Singleton's Double Gloucester Cheese, grated
200g Pancetta cubes
40g Thinly sliced white onion
200ml Double cream
100ml Milk, whole
5 Eggs, large
2 Thyme sprigs
1 Readymade short crust pastry case
Salt & pepper

(Tip; you can also use ready made pastry or try making your own - this needs to be blind baked at 190 degrees C for 20 minutes with baking beans & then for a further 5 minutes without the beans.)


  1. Weigh all ingredients as listed above.
  2. Pre-heat the oven to 160 degrees C.
  3. In a large frying pan on a high heat, fry the pancetta until golden brown and crisp, place on kitchen paper to drain.
  4. In the same pan on a medium heat, fry the onions (without colour) until softened.
  5. Sprinkle half of the grated Grandma Singleton's Double Gloucester cheese, onions and pancetta into the bottom of the pastry case.
  6. Whisk together the eggs, milk, cream and season.
  7. Pick the thyme leaves off the stalk, add this to the egg mixture.
  8. Pour the egg mixture into the pastry base.
  9. Scatter over the remainder of the grated Grandma Singleton's Double Gloucester cheese.
  10. Bake for 30-40 minutes.
  11. Remove from the oven and allow to cool.
