Grandma Singleton's Famously Strong Lancs, Cheesy Cheats Carbonara

Ingredients 

100g Grandma Singleton’s Famously Strong Lancashire Cheese, grated
100g Linguine pasta
100g Cubed pancetta
100g Creamed cheese
1 White onion, small
1 Garlic, clove 
Salt & pepper

 

Method

  1. Weigh all ingredients as listed above.
  2. Cook the linguine pasta in rapidly boiling, salted water for 8–12 minutes.
  3. In a large frying pan on a high heat, add the cubed pancetta & fry until golden brown then turn the heat to medium (Tip; No oil will need to be added due to the natural fat in the pancetta).
  4. To the frying pan, add the thinly sliced onion and crushed garlic, cook until the onions are translucent, then turn the heat onto low.
  5. When the pasta is cooked drain in a colander (Tip; Retain about a mug full of the pasta water before draining).
  6. Drain the pasta and add to the frying pan.
  7. Stir the pasta into the onion and pancetta.
  8. Add the crème fraiche and cheese to the pan & stir.
  9. Season to taste.
  10. When the cheese has melted serve the pasta in a bowl.
  11. To garnish you could even add more of your favourite Grandma Singleton’s cheese!
