Grandma Singleton's Famously Strong Lancs, Chicken & Spinach Crepes

Serves 4 - 6

200g Grandma Singleton's Famously Strong Lancashire Cheese
400g Cooked whole chicken, shredded (Great for using up leftovers from Sunday!)
200g Button mushrooms
200g Spinach
50g Butter
50g Plain flour
10g Tarragon, fresh
5g English mustard
250ml Milk, whole
50ml White wine
8 Readymade savoury pancakes
2 Black peppercorns
1 Bay leaf
1 White onion, peeled
Salt & Pepper

 

Method

  1. Weigh out all ingredients listed above.
  2. Peel and roughly slice onion, grate the cheese, thinly slice the mushrooms and finely chop the tarragon.
  3. Place the milk in a thick bottomed pan along with the bay leaf, peppercorns and onion.  Allow to come to the boil and simmer gently for 3-5minutes.
  4. In a seperate pan warm the butter until melted and then add the flour.  Keeping stirring until a paste has formed.
  5. Strain the milk and slowly add it to the paste (called a Roux) whilst stirring over a low heat at all times.  Keep stirring until a thick sauce has formed and remove from the heat.  Add the english mustard.
  6. In a large bottomed pan on a medium/high heat, warm a little olive oil, add the sliced mushrooms and cook until golden brown.
  7. Add the spinach and cooked chicken to the pan, allow to warm through for a few minutes.
  8. Add the white wine and tarragon, reduce the liquor by half.  Remove from the heat.
  9. Add half the bechamel sauce and half of the grated cheese to the pan.
  10. Fold the ingredients to mix together and season to taste, the sauce should just coat the ingredients.
  11. Place the chicken and spinach mix in the pancakes and roll in half.  Place in individual oven dishes, place 2 per person in each dish.
  12. When all the pancakes are filled, pour a little of the bechamel sauce on top of the pancakes, enough to cover the top of the pancakes.
  13. Finish the pancakes with a handful of your favourite grated Grandma Singleton's Famously Strong Lancashire Cheese and grill or bake in a hot oven until golden brown and crisp.
