Grandma Singleton's Parlick Fell, Beef Tomato & Balsamic Vinegar Salad

Serves 2




100g Grandma Singleton's Parlick Fell Cheese
15g Pine nuts
10 Fresh basil leaves
1 Beef tomato
1 Red onion
Splash of Balsamic vinegar
Sea salt & Cracked black pepper



  1. Weigh all ingredients listed above 
  2. Wash the beef tomato and fresh basil leaves in cold water, pat dry with kitchen paper. 
  3. Thinly slice the beef tomato and lay on a medium sized serving plate.
  4. Peel and thinly slice the red onion, scatter on top of the tomato.
  5. Roast the pine nuts until golden brown in a pre-heated oven, 200 degrees C.
  6. Scatter the pine nuts and basil leaves over the tomato and onion.
  7. Crumble the Grandma Singleton's Parlick Fell cheese over the salad.
  8. Splash with a good helping of Balsamic vinegar and season with the sea salt and cracked black pepper.
  9. This dish can be served as a starter, lunch or a great side dish at a BBQ.
