Grandma Singleton's Red Leicester & Root Vegetable Mash

Serves 4 - 6



200g Grandma Singleton's Red Leicester Cheese
50g Butter
15g Wholegrain mustard
1kg Mixed root vegetables (carrots, potatoes, swede, parsnips & sweet potatoes)
Salt and pepper



  1. Weigh all ingredients as listed above.
  2. Peel and wash all selected vegetables and cut into 2-3cm pieces ready for cooking (ensure all vegetables are roughly the same size for even cooking.)
  3. Place all the vegetables in a pan of salted water and bring to the boil.
  4. Allow to gently simmer until all the vegetables are tender (about 25-30 minutes).
  5. Grate the cheese.
  6. Drain the vegetables well.
  7. Return the vegetables to the pan and allow to steam for a few minutes to evaporate any excess moisture.
  8. Mash the cooked vegetables with the butter, half of the grated cheese, mustard, salt & pepper.
  9. Place the mash in an oven-proof serving dish, sprinkle the remainder of the cheese on the top and grill until golden brown.
  10. Serve alongside any meal, simply replace your traditional mash potato with this cheesy alternative!
