Grandma Singleton's Sage Derby, Pork, Roast Onion & Apple Salad

Serves 2 - 3

Ingredients

60g Grandma Singleton's Sage Derby Cheese
100g Roast pork left over's
100g Chopped lettuce
25ml Olive oil
5ml White wine vinegar
1 Green apple, finely sliced
1 Red onion, large
Half a lemon
Salt & pepper


Method

  1. Weigh all ingredients as listed above.
  2. Pre-heat the oven to 220 degrees C.
  3. Peel the onion, removed the core and slice into quarters.
  4. Place in an oven dish and toss with salt, pepper and 10ml of oil oil. Roast for 5-10 minutes until softened and darker in colour.
  5. Cut the Grandma Singleton's Sage Derby cheese into cubes and place into a large mixing bowl.
  6. Roughly cut the pork into bite sized pieces and place in the bowl.
  7. Add the roasted onions, apples and salad into the bowl and carefully mix together.
  8. In a separate bowl whisk together the juice of half a lemon, olive oil, white wine vinegar and season to form a light vinaigrette. (The vinaigrette should be quite sharp to cut through the pork and cheese however, if too sharp add a little pinch of sugar to sweeten it up!)
  9. Add the dressing to the to the salad and toss until all the leaves are lightly coated.
  10. Serve and enjoy!
