Grandma Singleton's Sticky Toffee Cheese, Crunchy Pie Bars

Serves 10



300g Grandma Singleton's Sticky Toffee Cheese
200g Creamed cheese
200g Flour, plain
200g Oats
100g Caster sugar
100g Muscovado sugar
100g Cold butter, unsalted
100g Pecan nuts, crushed slightly
3 Eggs



  1. Weigh all ingredients as listed above.
  2. Pre-heat the oven to 180 degrees C and line a baking tray with greeseproof paper.
  3. Mix 1/4 caster sugar with all of the brown sugar.
  4. Mix into the butter until a crumb texture is formed.
  5. Stir in the oats and pecan nuts.
  6. Using 1/2 the oat mixture, line the baking tray until evenly covered and bake for 15 minutes.
  7. Beat the cheese, creamed cheese, remaining sugar and eggs until it is well blended, light and a smooth consistency.
  8. Pour this over the baked base and finish with the remaining mixture.
  9. Bake for 20-25 minutes until is has set, cool and serve.
