Grandma Singleton's Three Cheese and Onion Pie

Serves 4 - 6



100g Grandma Singletons Beacon Fell Creamy Lancs, grated
100g Grandma Singletons Double Gloucester, grated

100g Grandma Singletons Vintage Cheddar, grated

50ml Whole milk

50ml Double cream

10ml Olive oil

15g Plain white flour

5g English mustard

5g Butter, room temperature

2 Medium white onions, finely sliced

1 Large potato, peeled and cut into 1cm cubes

1 Roll readymade savoury short crust pastry

1 Egg

Pinch of grated nutmeg

Salt and pepper



  1. Weigh all ingredients as listed above.
  2. Pre-heat the oven to 180 degrees C.
  3. Place the cubes of potato in a pan of salted water, bring to the boil on a higher heat and cook until soft.
  4. In a large frying pan on a medium heat, add the oil and cook the finely sliced onions slowly until softened.
  5. Decrease the heat to a low temperature, add the flour and cook for 1-2 minutes.
  6. Add the milk and cream and stir until smooth, thick sauce is formed.
  7. Drain the potatoes once cooked and add to the sauce.
  8. Add the grated Grandma Singleton's cheeses, English mustard, nutmeg and season to taste.
  9. In individual cake/pastry tins, grease the inside of the moulds with a small amount of butter.
  10. Line each mould with the readymade short crust pastry ensuring the pastry is pressed into each corner of the tin.
  11. Fill the moulds 3/4 full with the cheese and potato mixture.
  12. Fold the edges of the pastry over into the middle of the mould, making sure there are gaps in the pastry so little sauce can escape in the cooking process.
  13. With a small knife, make two small holes at the top of the pie to allow steam to escape.
  14. Brush the tops of each pie with egg wash and bake in the oven for 20-25 minutes until the pastry is cooked and golden brown in colour.
  15. Serve with mashed potato and some peppery watercress.

    Please note: If you are making one large pie, please blind bake the pastry case in the oven with baking beans for 10-15 minutes to ensure the pastry case is cooked throughout.
